Forget that standard soup: this recipe is one you want to know

Yvette van Boven calls this recipe from her new cookbook ‘Home Made Basics’ the simplest soup in the world. It is one she often makes, using avocado as a binding agent, which creates a nice soft and creamy soup without the use of cream or crème fraîche.
Ingredients
- 1 tablespoon olive oil, plus extra
- 1 onion, chopped
- 2 cloves of garlic, crushed
- 1 pinch of chili flakes
- 1.5 liters of vegetable broth
- 1 large head of broccoli, diced, including the stem
- 300 grams of spinach, washed
- 2 avocados, diced
- ½ container of watercress
- sea salt and freshly ground black pepper

How to make the broccoli spinach soup
1. Heat the olive oil in a large pot over medium heat. Sauté the onion, garlic, and chili flakes, stirring until the onion is soft and everything smells nice.
2. Pour in the vegetable broth and slowly bring it to a boil. Add the broccoli and cook for about 15 minutes, until it is soft. Stir in the spinach with the broccoli and cook for another 2 minutes.
3. Add 1 diced avocado. Blend the soup with an immersion blender or in a blender, but don't make it completely smooth; there can still be chunks in it. Season the soup with salt and pepper.
4. Ladle the soup into four large bowls. Garnish the soup with the remaining avocado and a sprig of watercress, and drizzle with olive oil.
