Ingredients
25 g butter
100 g pancetta, diced
1 clove of garlic
350 g spaghetti
2 eggs, beaten
40 g freshly grated Parmesan cheese
40 g freshly grated pecorino romano
salt and freshly ground black pepper

There are various explanations for the name of this pasta dish with pancetta, eggs, and pecorino romano. It is believed that carbonara refers to the charcoal makers who burned wood into charcoal in the hilly area around Rome. During World War II, many people fled the city and retreated to the mountains, where they learned to make this dish. Traditionally, spaghetti carbonara is made with guanciale (pork cheek), but pancetta (pork belly) is easier to obtain; just choose a type that is not smoked. If you can't get pecorino romano, just use Parmesan cheese.

How to make spaghetti carbonara
Heat the butter in a pan, add the pancetta and the clove of garlic, and cook until the garlic turns golden brown. Remove the garlic from the pan.
Meanwhile, cook the spaghetti in a pot of lightly salted boiling water until al dente, drain, and add to the pan with the pancetta.
Remove the pan from the heat and add the eggs, half of the Parmesan cheese, and half of the pecorino romano, plus some pepper. Toss the pasta with this mixture until the eggs are cooked and cling to the pasta. Add the rest of the cheese, toss the pasta again, and serve it.
