Recipe: Piña Colada Mimosa

My friend has been saying it for a year: this will be the summer of day drinking. Start early, peak early, go to bed on time, wake up hangover-free (or well.. rested). And let me tell you, I have the perfect cocktail recipe for that.
Ingredients
- 1 large egg
- Pineapple, cut into wedges and for garnish
- 240 ml pineapple juice
- 120 ml coconut rum
- 1 bottle of prosecco
- Maraschino cherries, for garnish
The Piña Colada Mimosa. After all: the mimosa is the ultimate daytime cocktail. Every respectable brunch spot in New York has it on the menu. Mix that with the always summery, tropical piña colada and you have the ultimate summer drink.
Ideal for the beach, by the pool, in the park.. where not actually?
Here's how to make the Piña Colada Mimosa:
- Put some sugar on a plate. Run the pineapple wedges along the rim of your glass so they get moist and then dip the glass in the sugar for a nice sugar rim.
- Pour 60 ml pineapple juice and 30 ml coconut rum into the glass and fill the rest with prosecco.
- Garnish with a wedge of pineapple and a Maraschino cherry and drink up!
