Recipe: Creamy garlic shrimp with spaghetti

Ingredients

  • 3 cloves of garlic, finely chopped
  • 1/4 bunch of parsley, chopped
  • 40 g Parmesan cheese, grated
  • 450 g cocktail or jumbo shrimp, deveined
  • 240 ml cream
  • salt and pepper
  • 2 tbsp olive oil
  • 400 g spaghetti

Feel free to use frozen shrimp for this. Let them thaw in the fridge overnight, drain well, and pat dry with kitchen paper. They are done when they are nice and pink and no longer have any transparency.

Here's how to make the creamy garlic shrimp

1. Bring a large pot of water to a boil and cook the pasta al dente in the salted water while you prepare the shrimp. You can do that.
2. Sprinkle the shrimp with salt and pepper.
3. Heat 1 tablespoon of the oil in a large deep frying pan or sauté pan over medium heat.
4. Place the shrimp in a single layer in the pan and cook them for about 2 minutes on each side until pink and curled.
5. Scoop them onto a plate and set aside.
6. Heat the rest of the oil in the same pan and sauté the garlic for 1-2 minutes until fragrant but not browned.
7. Add the cream and season generously with pepper and salt.
8. Lower the heat and cook, stirring, for 2-3 minutes until the sauce is thick enough to cling to the back of a spoon without sliding off in one go.
9. Turn off the heat, add the Parmesan cheese, and stir until the cheese is melted and the sauce is smooth.
10. Return the shrimp to the pan and toss.
11. Add the cooked pasta and toss again until everything is coated.
12. Scoop into deep plates, garnish with the chopped parsley, and serve immediately.
