The most delicious vegan lemon cake to make at home

One percent of all Dutch people eat vegan, not counting occasional vegans. There’s a good chance that there’s one in your circle of friends or colleagues. How do you bake something tasty for them if you can’t use butter and eggs? Solution: this vegan lemon-ginger-poppy seed cake is really doable!

My sister baked a lemon-ginger-poppy seed cake on her birthday especially for her vegan friends. It turned out to be even tastier than her classic cream cheese cherry crumble pie. The recipe turned out to be from friend Lian, who got the recipe from someone named Marijke. It comes from a neighborhood cookbook. Now that we’ve settled all copyright issues, we can move on to important matters: the recipe for this mysterious cake. Tip from Lian: don’t tell anyone that the cake is vegan, otherwise people won’t dare to taste it.

Ingredients

  • 250 ml soy yogurt
  • 250 ml sunflower oil
  • 175 grams of applesauce
  • 400 grams of self-raising flour
  • 200 grams granulated sugar
  • 12.5 grams of baking powder
  • 1 tablespoon of poppy seeds
  • pinch of salt
  • 2 lemons
  • jar of stem ginger

How to make the vegan lemon-ginger-poppy seed cake

1. Grate the lemons. Fish the ginger out of the jar and chop it small.

2. Stir the lemon juice and ginger syrup from the jar together and set aside.

3. Mix soy yogurt, sunflower oil, and applesauce together. In another bowl, combine flour, sugar, baking powder, poppy seeds, and salt.

4. Grease a cake tin (with oil!) and preheat the oven to 200 degrees.

5. Quickly mix the wet ingredients into the dry ingredients, stir in the lemon zest and ginger pieces. Pour the batter into the cake tin, bake for 50 to 60 minutes until golden brown and cooked through – test with a skewer.

6. Drizzle the lemon juice-ginger syrup mixture over the cake.
