The tip for when you don't want to eat meat but still crave a hamburger

‘Honey, can you get me a vegetarian version?’ Never thought I would ever say that, but I say it weekly now. Weird actually, how things can change. I don't necessarily see myself as a vegetarian, but I do notice that I automatically eat less and less meat. Flexitarian it is, I guess. Maybe because it doesn't need to be that way anymore. Maybe because we finally realize that there are also plant-based alternatives where you don't even notice that you're not eating meat.
Now imagine, you feel like letting your inner flexitarian loose for once, then this is your week. Joejoe, I don't know if you knew, but we are in the middle of the Week Without Meat (March 9-15). Curious about what I'm eating? I'm sharing my favorite with you. A healthy hamburger à la Kiekster. Okay, actually I got this recipe from the Albert Heijn website and then pimped it with my own burger. Yes, the secret lies in the ‘Meatier Beyond Meat‘ burger. I swear, you can't taste the difference. I tried them at IKEA and you just think you're eating a hamburger.
Want it slim? Use whole grain bread instead of a hamburger bun. Skip the mayo and go for hummus and salsa.

Good. What do you need for healthy hamburgers? (4 people)
- 2 zucchinis
- 1 bowl of Tasty Tom cherry tomatoes
- 1 clove of garlic
- 8 tablespoons of olive oil
- 40 grams of arugula
- 4 Meatier Beyond Burgers
- 4 whole grain rolls
- 4 tbsp hummus
- 4 tablespoons of mild salsa
And the preparation? Easy.
- Slice the zucchinis and tomatoes into half-centimeter slices and chop the garlic finely.
- Put 6 tablespoons of oil with the garlic and half of the arugula in a tall cup and puree with an immersion blender. Add a bit of pepper to taste. For some extra kick, you can also choose to throw in a tablespoon of jalapeño peppers.
- Do you have a grill pan? Good for you. Heat the grill pan. If not: buy one, really, those things are chill.
- Okay, a normal pan can work too...
- Brush the slices of zucchini and tomato with the homemade ‘arugula oil’ and grill the zucchini for 4 minutes until golden brown, turning halfway.
- Grill the tomato slices for a minute and turn halfway. Distribute the rest of the arugula oil over the vegetables and keep the grill pan on the heat.
- Brush the veggie burgers with the rest of the olive oil and sprinkle with pepper and possibly salt. Grill them because then they become delicious. Turn halfway.
- Halve the rolls (make sure to get really good rolls!) and spread the bottom halves with a dollop of hummus.
- Distribute the rest of the arugula over the rolls and top with a few slices of zucchini and tomato. Place a Beyond burger on each and scoop 1 tablespoon of salsa on top.
- Sprinkle some extra zucchini and tomato on top just because you can and cover your über creation with the top half of the roll. Joejoe, healthy hamburgers it is tonight. Bon appétit!
