This is how you make a divine corona-proof cheese fondue

Times of corona call for comfort food. For food that is cozy and warming delicious. Like a big pot of cheese fondue. But how do you do that if your favorite cheese fondue restaurant is closed and you can't cheese fondue together at all? Well, I have the golden tip!

In a previous life, it was a very normal scene: hanging out with friends over a steaming pot full of creamy, melted cheese and chatting for hours, with a glass of wine (or usually, two, three. And actually, I mean bottles). That life seems very far away after two weeks of mandatory staying at home and no one knows how long it will last. So what do you do then? You download the Houseparty app and put a box of Vacherin in the oven. Your friends do exactly the same and that way you can still cheese fondue together!

Winter cheese
The Vacherin Mont d’Or is a delicious cheese to eat cold, but you can also make a killer cheese fondue from it. The Vacherin Mont d’Or from my favorite cheese affineur Bourgondisch Lifestyle comes from the French Jura. This ‘winter cheese’ is produced between September and March (in the summer, the same cheese makers make the famous and equally delicious Comté).

This is how you make a Vacherin cheese fondue
Remove any stickers from the wooden box. Take the lid off the cheese and place it at the bottom. Now wrap the box in aluminum foil. Lightly score the rind and press a clove of garlic into the cheese. Grind some black pepper over the cheese and pour a little white wine over the rind.

Place the cheese in a preheated oven for +/-30 minutes at 180°C. When the rind is golden yellow and gratinated, you can take the Vacherin out of the oven. Dip a delicious French baguette in it and possibly some raw vegetables. A fresh salad with crunchy beans and garlic vinaigrette and some charcuterie makes it complete!

Is your mouth already watering? Then order a Vacherin au Four package for 2 people (€ 38.50). In addition to a Vacherin, there is also a bottle of matching fresh white wine (Arneis), two petit baguettes, and an Italian salami.

Don't serve your wine too cold. I've heard that strongly chilled drinks cause the cheese to coagulate faster in your stomach. I don't know if it's true, but why take the risk? Tip: also pour a little wine into the cheese; the wine affects both the flavor of the fondue and makes the fondue softer. Bon Appétit!
