Ingredients

  • 4 eggs
  • Pinch of cayenne pepper
  • Salt
  • Butter (to spread on the sandwiches and to fry the eggs)
  • 3 tablespoons cream cheese
  • 4 slices of white bread
  • 4 thick slices of cheese

Normally, you should make scrambled eggs slowly and on low heat to avoid getting dry hard bits of egg. But this clever chef cooks the scrambled eggs on reasonably high heat and then stirs in – brilliant, right? – cream cheese. Here's how to make this egg-cheese sandwich

  1. Whisk the eggs in a bowl with cayenne pepper and plenty of salt.
  2. Melt some butter in the frying pan. When the foam subsides, you can add the beaten eggs. Keep stirring to prevent large curds from forming. Cook the egg for about a minute, until the scrambled egg is dry.
  3. Remove the pan from the heat and stir in the cream cheese.
  4. Top two slices of bread with cheese. Spread the egg over it. Place the second slice of bread on top and you're done.
  5. Heat some butter in a pan and fry the sandwiches for three minutes on each side, until golden brown and the cheese is melted.
