Preparation: 10 min
Preparation: 35 min
Servings: 4

INGREDIENTS
Cubed raw salmon
Soy sauce
Finely chopped red pepper
Finely chopped ginger
Brown sugar
Sesame oil
Vinegar
Finely chopped horseradish
Toasted sesame seeds
Furikake (Japanese dried seaweed mix)
Sliced spring onion

Mr. Temaki specializes in Japanese seaweed sheets rolled like a cone filled with rice, fish, and avocado, for example. And they are called, you guessed it: temaki. One of the temakis that Mr. serves is filled with Hawaiian salmon poke. This is due to the use of vinegar, albeit with a Japanese twist. You can taste these and other temakis at the Foodhallen in Amsterdam and Fooddock in Deventer.

But don't be so lazy and make your own salmon poke according to Mr. Temaki's recipe.

Preparation
Mix all the ingredients in a glass bowl, except for the toasted sesame seeds, furikake, and sliced spring onion. Let it marinate covered in the refrigerator for about half an hour. Stir together and sprinkle sesame seeds, furikake, and spring onion on top just before serving.
