Super fast speculoos mousse is the hit of this lockdown

People who are slowly going crazy from boredom due to working from home are apparently all coming up with new recipes. And apparently, they mainly hoarded instant coffee and speculoos cookies beforehand, alongside all the toilet paper. The latest invention from the corona quarantine: this ridiculously easy speculoos mousse.
INGREDIENTS
600 ml whipped cream
10 tablespoons of speculoos paste
a few speculoos cookies

The corona crisis has already brought us the wonderful Dalgona Coffee, a tortilla with chips and a speculoos tiramisu. Everyone is also baking like crazy with sourdough from their own kitchen and , why don't we do more with it? from their own fruit bowl. Is it to become zen? Or to get rid of the hoarded items?
Either way: speculoos mousse. You only need whipped cream, a few cookies, and a jar of speculoos paste.
How to make speculoos mousse
- Whip the cream until it forms soft peaks.
- Heat the jar of speculoos paste in the microwave for about 20 seconds.
- Scoop 10 tablespoons of speculoos paste into the whipped cream. Gently fold it together with a spatula until the speculoos is completely mixed into the cream.
- Crumble the cookies. Put some crumbs at the bottom of a glass or bowl. Divide the speculoos mousse over it.
- Decorate the glasses with some whipped cream, cookie crumbs, or small cookies. You can also drizzle some speculoos paste on top.
- Place the glasses in the refrigerator for two hours to set.
