All nice and well; Red Velvet cake, cheesecake, or macarons for the advanced among us. And once in a while it's great if you feel like showing off a bit, and have at least an hour to spare. But sometimes you just want to sit on the couch in the next five minutes with something that is decadent and deliciously chocolatey.
Ingredients
- 3 tbsp coconut oil or canola oil
- 1 egg
- 3 tbsp milk
- 1/2 tsp vanilla extract
- 2-4 tbsp honey or agave syrup
- 30 g flour
- 2 tbsp cocoa (unsweetened)
- 1/4 tsp baking powder
- pinch of salt
- 1 tbsp coffee (not ground, brewed)
- 30 g dark chocolate, coarsely chopped
Enter: the ‘mug’ cake. That is nothing more than a cake you make in a mug, and let's be honest – something you make in such a humble coffee mug can't be complicated, right? That's right! You can whip up this recipe from Half Baked Harvest in five minutes. Or ping it, because you make it nice and quickly in the microwave! Tip: make sure you have a little leftover coffee on hand, just a tablespoon.
Here's how to make the quick (but super delicious) coffee mug chocolate cake
- Melt the coconut oil in a microwave-safe large mug or cup.
- Whisk in the egg with the milk, vanilla, and honey.
- Add flour, cocoa, baking powder, and salt and stir until everything is just mixed.
- Pour the spoonful of coffee in the middle and stir gently, but not until it's completely absorbed.
- Place the chocolate chips in the middle.
- Microwave for 1 minute 45 seconds on the highest setting; your microwave may take 2 minutes or a few seconds longer, so keep an eye on it.
Eat or serve immediately, and definitely add a scoop of vanilla ice cream on top!
