This speculoos tiramisu is almost too easy to make

The packaged cookies you get in nine out of ten pubs with your coffee or tea? That's Speculoos, a type of fake speculaas. In this tiramisu, they play the leading role. You could book dozens of cups of coffee to get all the cookies, but you could also grab a pack of speculaas at the supermarket. Then take a jar of Speculoos paste or Bebogeen with you, because that also goes into this super easy dessert.

INGREDIENTS
1 large pack of speculaas (or 3 packs of Speculoos)
600 ml whipped cream
packet of vanilla sugar
1 tablespoon sugar
jar of Speculoos paste

Speculaas or Speculoos, does it matter? The difference is clear: speculaas comes from the Netherlands and Speculoos is Belgian. In Belgium, they wanted a cookie as tasty as a speculaas, but all those spices that go in were too expensive. That's why they made a cheap variant with candy syrup. Sometimes there's a bit of cinnamon in it, but then you've pretty much had it.

It doesn't matter; just grab a pack of those cookies and some whipped cream and off you go. You don't need much and the result is, if we are to believe all the Instagrammers and Facebookers, incredibly delicious.

Here's how to make Speculoos tiramisu

  • Whip the cream with sugar and vanilla sugar.
  • Heat the jar of Speculoos paste in the microwave until it becomes a bit thinner and more liquid.
  • Lay a layer of cookies in the dish. Put a layer of whipped cream on top and then drizzle some Speculoos paste over it.
  • Make layers like this until everything is used up. The last layer should be whipped cream, and save some cookies to decorate the tiramisu.
  • Put a bit of paste in a piping bag and pipe stripes on top. You can create nice marble stripes with a fork or skewer.
  • Let the Speculoos tiramisu sit in the fridge for 6 hours or overnight. Decorate the edges with crumbled cookies just before slicing.
