Are you someone who regularly puts a batch of fresh homemade cookies in the oven? Then try these delicious speculaas waffle cookies with Baileys Salted Caramel, dipped in chocolate. Mmm!

Ingredients

For 18 cookies

  • 100 g speculaas
  • 110 g butter, soft
  • 200 g wheat flour (type 405)
  • Flour for the work surface
  • 1 egg (size M)
  • 80 g brown sugar
  • 40 ml Baileys Salted Caramel
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • Sunflower oil for greasing

For the topping

  • 150 g milk chocolate coating
  • 5 ml Baileys Salted Caramel
  • 3 tablespoons caramel sauce (available at the supermarket)
  • 1 teaspoon sea salt

Here's how to make the Baileys speculaas waffle cookies

  • For the cookies, put speculaas in a blender and grind finely.
  • In a bowl, knead the flour, baking powder, egg, sugar, butter, salt, Baileys, and speculaas until a dough forms.
  • Wrap the dough in foil and let it cool in the fridge for at least 1 hour.
  • Preheat the waffle iron. Divide the dough on a floured work surface into pieces of about 30 grams each.
  • Shape the dough pieces into a ball with your hands.
  • Brush the waffle iron with a little sunflower oil and place the dough balls with enough space between them on the iron. Close the waffle iron and bake them until golden brown for about 4 minutes. Let the cookies cool on a rack.
  • For the topping, chop the chocolate coating finely and melt it in a bowl over a water bath.
  • Add Baileys and mix.
  • Dip half of the cookies in the chocolate and let them harden on a rack. Drizzle caramel sauce and sprinkle sea salt over the cookies and serve.

Tip: the Baileys must be at room temperature for the topping so that it connects with the tempered chocolate .
