It's actually a wonder that in the Netherlands not many more fries with cheese sauce are eaten. Our cheese is world-famous, most Dutch people are crazy about fries; 1+1 = a done deal, you would think? With this recipe for the tastiest cheese sauce, we are getting things started a bit!

INGREDIENTS
1 tbsp neutral oil (such as sunflower or canola)
small jalapeño pepper, sliced
1 onion, sliced
2 tbsp peppercorns
1 tsp salt
1 tbsp white wine vinegar
2 tbsp white wine
450 ml cream
250 g young aged cheese, grated
250 g spicy Cheddar, grated

We are still more than happy to respond to the call of Dutch potato farmers to eat more fries. And although we are also regularly advocates of dirty-delicious – think ready-made cheese sauce, we more often choose tasty-delicious. Homemade cheese sauce with a more complex flavor profile than you would think; that's something you can show off. This recipe was shared by the famous American Shake Shack-chain, and we know what will be on the home fry rotation from now on!

This is how you make the tastiest cheese sauce for a fries with cheese sauce

  • Heat the oil in a saucepan over medium-low heat and add the onion, jalapeño, peppercorns, and salt.
  • Sauté the onions until translucent in a few minutes and add the wine and vinegar.
  • Let it reduce briefly and pour in the cream.
  • Stir and turn off the heat.
  • Let this steep for 30 minutes (not on heat).
  • Send someone out to get fries and support your local fry vendor.
  • Strain the wine-cream mixture through a sieve into a bowl.
  • Pour this cream back into the pan and bring to a boil over medium heat.
  • Gradually add the cheeses as soon as the cream starts to boil and whisk vigorously until all the cheese is melted and you no longer see lumps.
  • Tadaaa, done!
  • Scoop a nice mound of fries onto your plate and overload with cheese sauce.
