Recipe: apple pie oatmeal

As a colorful continuation of The Radiant Table Morgane van Marcke wrote her second vegan cookbook, titled Dinner Served. The book contains more than 60 plant-based recipes that are both nutritious, simple, and very tasty. According to Morgane, plant-based eating should never be tasteless or boring – and this apple pie oatmeal certainly is not!
Ingredients
- 1/2 apple, chopped, with or without skin
- 1 tbsp coconut blossom sugar
- 1 tsp cinnamon
- 35 g oatmeal
- 130 ml plant-based milk
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- Pinch of sea salt
- Toppings: pecans, plant-based yogurt, and maple syrup

How to make the apple pie oatmeal
- Put the apple pieces in a small saucepan with 50 ml of water, the coconut blossom sugar, and 1/2 tsp of cinnamon. Cook them over medium heat until the water is dissolved and the apples are soft. You can always add a little extra water and continue cooking the apples.
- Put the oatmeal, plant-based milk, maple syrup, 1/2 tsp cinnamon, vanilla extract, and sea salt in a small saucepan and heat over medium heat.
- Let the oatmeal thicken while stirring well until you reach the desired texture.
- Put the oatmeal in a bowl, place the apples on top or mix them into the oatmeal.
- Serve with plant-based yogurt, pieces of pecans, and optionally maple syrup.
