Ingredients
- 200 ml soy milk (or almond milk)
- 30 g cornstarch
- 1 tbsp ground flaxseed
- 2 tsp cinnamon
- 1 tbsp sugar or agave syrup
- 1 tsp vanilla extract
- 2 tbsp oil, for frying
- 6-8 slices (stale) whole grain bread or gluten-free bread
For the topping
- fruit of your choice
- finely chopped nuts
- 100% peanut butter
- plant-based yogurt

Here's how to make the cinnamon French toast
- Mix the soy milk, cornstarch, ground flaxseed, cinnamon, sugar or agave syrup, and vanilla extract with a whisk in a large bowl (the bread should fit completely in it).
- Heat a small amount of oil in a non-stick frying pan over medium heat.
- Dip a slice of whole grain bread into the batter.
- Carefully place the bread in the frying pan and meanwhile dip another slice of bread in the bowl. Place this one in the pan as well.
- Fry the French toast for 2 to 3 minutes on each side or until golden brown. Flip them with a spatula.
- Repeat this with the rest of the bread and continue until all the batter is used. Serve the French toast fresh from the pan or keep them warm in the oven at low temperature, covered with a tea towel.
- Garnish them with toppings like fresh fruit, nuts, peanut butter, or plant-based yogurt.
