Iced coffee popsicles

In the meantime, I have a pretty good collection of cookbooks in my cupboard, but the recipe that makes me the happiest this summer simply comes from the Appie. Yes, definitely don't forget to check the Allerhande from time to time, because there are some really nice recipes in there. Like this one: iced coffee popsicles. How delicious does that sound?

Ingredients

240 ml espresso
6 tbsp condensed full milk
1½ tbsp vanilla syrup
50 g dark chocolate

Needed: ice molds

And I must admit: they also look very cute. I'm curious if my creation will turn out just as Instagrammable, but I will do my best. The recipe will definitely not be the problem, because it is super easy to make.

Ready in just three steps
Look, that's a nice surprise. Once you've gathered all the ingredients, you only need to go through these three steps:

  • Mix the espresso, two-thirds of the condensed milk (how delicious is this as an ingredient by the way? I see it popping up more and more and I love it) and the vanilla syrup in a measuring cup with a pouring spout (I don't have that so for me it will just be a bowl) and mix until well combined.
  • Fill the ice molds with the mixture up to about four-fifths. Then put it in the freezer for two hours. When you take it out again, it should have a bit of the texture of a slushie, and that's good. Then add the remaining condensed milk to the popsicles, insert the stick, and let them sit in the freezer for at least six to eight hours.

Melt the chocolate in a bain-marie before you take the popsicles out of the freezer and drizzle the chocolate over the frozen popsicles with a teaspoon in a zigzag pattern.

Et voilà! This weekend I'm going to make them myself because I really need this when we hit 30 degrees in the Netherlands.
