For this grilled cheese with Gruyère and red wine (preferably Cabernet Sauvignon) you also need a tablespoon of butter, half a chopped red onion, a finely chopped clove of garlic, a bit of thyme, rosemary, and a tablespoon of flour.
Here's how to make a toastie with Gruyère and red wine
Melt the butter in a pan and add the chopped red onion. After a few minutes, you can add the garlic, thyme, and rosemary. Cook for a few more minutes and then add the tablespoon of flour.
Pour 180 milliliters of wine into the roux and cook until the sauce is thick enough to stick to a spoon. Taste to see if the alcohol flavor is gone.
