Fries in the skies, it sounds quite nice, but is it also tasty? We will soon be able to taste it ourselves, because Transavia will sell fries (or chips, as you wish) during their flights. How then? And will this be the replacement for the eternal sausage roll and/or the Unox noodles that I order during their flights?
I think it's a brilliant plan, let me state that upfront, but also quite tricky. Because how do you get them crispy? I strongly doubt they will set up all sorts of fryers in the cabin. Or Airfryers. No, these will be fries that go in the oven and that makes me apprehensive.
After two years it's here: the perfect crunchy airplane fry
Writer and self-proclaimed fry enthusiast Leon de Winter (known for the world's first low-carb fries) came up with the plan and teamed up with Wilbert de Louw, director of Foodcase, a company that specializes in food for the aviation industry. Crispy fries from an oven, he also had his doubts about that, especially since ovens in airplanes can only go up to a maximum of 150 degrees for safety reasons.
But where there's a will, there's a way. After two years of developing and improving, the men have come up with it: the perfect crispy fry at high altitude. How then? They are keeping that somewhat secret: ‘Otherwise everyone would do it, of course. It has to do with three things: we used a specific potato variety, developed a coating for the fries, and designed a special container that ensures all sides of the fries become nice and crispy in the oven,’ says De Louw.

Honestly, I think it's a great development and I'm really looking forward to flying with Transavia again, because they are now making up for that lack of legroom with an expansion of their menu.
