INGREDIENTS
– 600 g edamame
– 4 little gem lettuces or 1 head of romaine lettuce, roughly chopped
– 4 tbsp shelled hemp seeds
– 3 tbsp pickled jalapeños, roughly chopped
– 3 tbsp rice vinegar
– 1 tbsp sesame oil
– 4 hot-smoked salmon fillets
– salt

Welmoed: ‘This is my go-to salad when I don't have time (or feel like) cooking. Because of the fattiness of the salmon, you hardly need to add any extra oil, just a bit of sesame oil for flavor.’

Here's how to make the 5-minute salad with hot-smoked salmon and edamame

  • Bring plenty of water to a boil and pour it over the edamame. Let it sit for 1 minute.
  • Drain and mix with the lettuce, hemp seeds, jalapeños, rice vinegar, and sesame oil.
  • Mix well and season with salt.
  • Place the salmon fillets on top of the salad.
