Pure C by Sergio Herman loses two Michelin stars in one fell swoop

Pure C, the restaurant of Sergio Herman with chef Syrco Bakker at the helm, belongs to the absolute top of Dutch gastronomy. Until recently (read yesterday, April 23, 2023) it was even a restaurant with not one, but two Michelin stars. Was yes, because today they lost them in one fell swoop. What is going on?

From two to zero Michelin stars
Today the annual Michelin stars have been awarded again (here you can find all the winners and losers in a row). The most striking thing for me: no third star for restaurant Fred** in Rotterdam (I had expected that after the move to Rotterdam ), only one new establishment with two Michelin stars (for Vinkeles** in Amsterdam) and last but not least: Pure C lost both stars at once. Huh?

New Michelin procedure
‘The decision to remove us from the guide has nothing to do with the quality of our restaurant, this is at this moment the most important message for our staff and our guests. Pure C is the first restaurant in the Netherlands to undergo the new Michelin procedure. When there is a change of chef, the restaurant is automatically removed from the guide and the restaurant and the new chef get the chance to prove themselves again the following year. A challenge that we as a team are going for 100%,’ Pure C communicates via social media channels.

Syrco Bakker starts for himself
The change of chef is related to the departure of Syrco Bakker. He is starting for himself with two new establishments. His first establishment will open in Bali and will be called Syrco BASÈ. The opening is scheduled for November this year. In the municipality of Sluis, Syrco will also start a new establishment, the opening of which will take a bit longer. Extra nice: local residents will soon be able to go here for their daily groceries.

It wouldn't surprise us if both Pure C and Syrco Bakker have a star again in no time.
