This is how you make a camping-proof BLT salad with smoked chicken

Have you finally set up that tent, inflated the air mattress and unfolded the table, you still have to cook... There you are struggling on such a wobbly camping stove, which ultimately is not nearly as tasty as at home nine times out of ten. Fortunately, there is Julius Jaspers with his book Camping Cooking. He has countless handy tips, a packing list, and delicious recipes that are also camping-proof. What do you think of sausage in beer or the ultimate guilty pleasure mac & cheese? My personal favorite on a hot summer evening is the BLT salad with smoked chicken, and this is the recipe.

INGREDIENTS
3 tbsp yogurt
3 tbsp mayonnaise
1 tbsp white wine vinegar
1⁄2 tsp garlic powder
1 tbsp maple syrup
4 little gem lettuces, chopped
16 cherry tomatoes, halved
1⁄2 cucumber, seeds removed and sliced
2 spring onions, sliced
250 g smoked chicken breast, diced
100 g aged cheese 40+, diced
4 slices of bacon, crispy fried, cooled and crumbled
salt and pepper
Fortunately, my task at the campsite was always limited to the dishes (I was 12 when I last went camping). It was up to my father to prepare something edible for the five of us on that rickety gas stove. No wonder we went out to eat nine times out of ten on vacation. The few times we ate at the tent it was usually couscous or canned pasta (which I actually loved).
The experienced camping cook
Although I enjoyed my father's cooking skills, Julius is clearly an experienced camping cook. Julius: ‘People who don't know me think I surround myself daily with the best equipment in the most beautiful kitchens and that I achieve my successes there: but nothing could be further from the truth. I love to improvise; you are an old caterer or you are not! The word ‘camping’ is also quite familiar to me. I drive an average of a month a year in a camper through nature and I cook in it every day. If we go out to eat twice in thirty days, it's a lot; cooking every day, I love it.
You feel like you're in America
Julius: ‘A BLT is actually a sandwich: the bacon, lettuce and tomato sandwich, but why not make a nice salad out of it? Delicious with smoked chicken and a bit of sweet maple syrup (or use some honey), a piece of bread on the side and you feel like you're in America, because that's where the BLT was invented in 1903.’
This is how you make the camping-proof BLT salad with smoked chicken
Mix the yogurt, mayonnaise, white wine vinegar, garlic powder, and maple syrup into a dressing.
Combine the little gem with the cherry tomatoes, cucumber, spring onion, smoked chicken, cheese, and bacon, and mix the dressing in at the end.
Let it sit for 15 minutes and season with salt and pepper.
