Delicious breakfasts that you can easily take to work

Are you like me, always too busy to have a calm breakfast in the morning, but still want to eat something healthy and tasty to start the day right? Don't worry, I have the solution for you. With these breakfasts, you start your workday well, healthy, quickly, and super tasty.
1. Overnight Oats with fruit and nuts
Prepare this breakfast the night before. Mix oats, milk of your choice (almond milk is very nice in this recipe) and chia seeds together. Put it in a container and let it rest overnight in the fridge. The next morning, add your favorite fruit as a topping. Strawberries, raspberries, banana, and blueberries are my favorites. Top off the masterpiece with a handful of nuts, seeds, and/or currants. Voilà, now you can show off your breakfast to your colleagues.
2. Banana-quark pancakes
Craving pancakes, but not in the mood for all that sugar in the morning? Then make these - my favorite - banana pancakes. Mash half a banana into a smooth substance and mix with 1 egg, a pinch of salt, 1 teaspoon of baking powder, a small glass of milk, 1 tablespoon of quark, and 70 grams of (whole grain) flour. Tip: for more protein, add a delicious vanilla protein powder. Also nice: cinnamon and/or speculaas spices in this mixture. Fry them in the pan on low heat; you should be able to fit about 3 to 4 small pancakes in the pan. In total, you will have about 6 mini pancakes. When the batter starts to bubble on top, you know it's time to flip them.
Stack 3 of the pancakes on top of each other in a container, spread quark and honey between the pancakes, and do the same with the other 3. Top off with fruit, muesli, and a bit of honey. Trust me, after you’ve tasted these pancakes, you will never want to eat regular pancakes again.
3. Protein parfait
A parfait is your best friend when you need to make something quickly in the morning. Mix quark with your favorite protein or hemp powder. Mix a handful of granola with almonds; did you know that there are more than 20 grams of protein in 100 grams of almonds? Make layers of the freshly made protein quark, granola mix, and fresh fruit in a take-away cup. Super easy to make and you will be full all morning!
4. Vegetable pancakes (grandma's recipe)
Grandma's secret recipe is always a winner. Do you prefer to start your day with vegetables? Then I have the tastiest recipe: Grate a raw potato and some sturdy vegetables, such as parsnip or carrot. Squeeze out the moisture in a sieve, add an egg, some pepper, salt, herbs, and possibly a bit of grated cheese. Fry the pancakes in a pan and you have a nutritious breakfast for on the go. Grandma's tip: The pancake can also be baked in a baking dish in the oven at 200 degrees for about 25 minutes.
5. Toast with homemade egg salad
This classic cannot be missed. Boil an egg and mash it into pieces. Mix the eggs with a tablespoon of mayo zero and a bit of mustard; without mustard, this egg salad is not perfect. Season with pepper, salt, and curry powder. Spread the egg salad on a toasted brown roll and top with some chives. Enjoy!
6. Peanut butter-banana tart
A guilty pleasure that gives you the energy boost you need in the morning. Toast a roll, spread peanut butter (with chunks) on it, and place banana slices on top. Add a bit of honey for the ultimate treat, top off with a bit of salt, and for the real sweet tooth among us: melted chocolate spread. Enjoy your tart!
And voilà, you have six easy, healthy breakfasts for busy mornings. Shake off that stress and enjoy your first meal of the day — you deserve it.
