Easy recipes of the week: Hailey Bieber's pizza toast

“What are we eating today?” It is probably the most frequently asked question in the world. After a hectic day, running from place to place and a packed diary, you really don't feel like spending hours in the kitchen. We understand that. You want to conjure up something tasty that is not just a quick snack, but does not have to take hours. Because while we all crave a quick meal from time to time, you don't want to settle for a boring, quickly made meal every day either. Luckily, I have something for you! In the section Easy recipes of the week every Monday, we look for the quickest, easiest and tastiest recipes you can put on the table in no time. This week: pizza toast á la Hailey Bieber.

Yes, is there anything this Hailey Bieber can't do? Being a model, starting a beauty empire and making delicious recipes. After cottage cheese cinnamon buns, she has returned to the kitchen for something new: a healthier pizza, aka pizza toast. It may not sound so... appetising, but trust me: this will make you dream. Because what's not to like about this? It's toast, tomato sauce and cheese. That's heaven on earth, isn't it? And honestly: any opportunity to eat pizza is a good one. You've learned that by now from Eat Pray Love. So without further ado: let's cook.

Oh, and another fun fact before we start: Hailey previously told us in a tutorial that she does know that she is ‘not the first to put pizza toppings on toast’. She came up with this idea when she was (hold on) high. She was super hungry and had all sorts of ingredients in the fridge. Anything but dough. So yeah, what do you do? Throw everything together that you have. And that turned out well into a family favourite recipe.

The shopping list (for 2 people, so 2 pizzas)

  • 1 large beef tomato
  • 2 tablespoons of olive oil
  • Lemon juice from 1 lemon
  • Salt and pepper to taste
  • 2 large, thick slices of bread
  • 2 teaspoons unsalted butter
  • White truffle oil to taste
  • 1 ball of mozzarella
  • 1 ball of burrata
  • +/- 100 grams of tomato sauce
  • 112 grams grated Parmesan cheese
  • Dried oregano to taste
  • Chili flakes to taste

The preparation

Step 1: prep your tomatoes

This recipe involves marinating those yummy beef tomatoes for a while. Hailey will eat this on its own as a snack, but definitely on your pizza toast. So you start by slicing your tomatoes. Place them on a plate and squeeze the juice from the lemon over the tomatoes. Then pour the olive oil over them. Then follow with the salt and pepper, tasty as much as you like. Want to upspice it up? Then use balsamic vinegar instead of lemon. Leave the tomatoes and take a look at your oven. We're going to preheat it to 170 degrees.

Step 2: toast that business

Cut two big thick pieces of sourdough bread. Or whatever bread, you are the boss, but if you ask me, sourdough is the most delicious. Also make sure there aren't too many holes in the bread, because that's awkward. Take your white truffle oil and drizzle it lightly over the bread. Turn it over and do the same. Next, you're going to butter both sides of the bread. And you don't have to be sparing with this, mind you. May be thick. You only live once. Fry it in your pan on medium heat (or in your contact grill) until it is nice and crispy and golden brown. Don't want it to burn? Then keep turning it until it's done. Let it cool as you continue with the... Mozzarella.

Step 3: the cheese

Slice the mozzarella and spread it on the toast. Place the bread slices on your grill and pop it in the oven. Because no (shocking), we're not going to put the tomato sauce on as the first layer. Then your bread will get soft, you don't want that, do you? You need to let the cheese melt for a while first. Only then do you add the tomato sauce. While that is simmering in the oven, start working on the tomato sauce.

Step 4: tomato sauce

You don't have a pizza without tomato sauce. So we're going to heat that up. Now, you could also make it yourself, but then it would no longer be an easy recipe. Right? Right. Heat the sauce in a pan.

Step 5: assemble your pizza toast

Remove your toast from the oven. Do allow the oven to preheat to 170 degrees again. Remove the tomato sauce from the heat and pour it over your toast. As with the cheese, you really don't need to be sparing with this. Take the ball of burrata and cut it into small pieces. This is something you have to be careful with though; burrata is a wet cheese. This can cause your bread to become soft as well as overpowering the flavour. So put only a few pieces of the cheese on top of the sauce. Top it further with the tomatoes and grate Parmesan as the last step. And Parmesan cheese you weigh with your heart, so there is no limit to this.

Step 6: baking

Bake your pizza toast in the oven for six to eight minutes until the cheese is melted.

Step 7: the final finishing touches

Let your pizza toast cool for about five minutes until you remove it from the baking tray. Cut them in half for tasty bites, or keep them in 1 piece for the ‘pizza feel’. As the very last step, sprinkle your toast with oregano and chilli flakes. And then it's basically done. Still don't think this is enough dinner? Then you can make a simple salad to go with it. And no: not a salad with 10 steps and a difficult dressing. I understand you don't feel like that at all. Think of an easy peasy rocket salad with tomato, pine nuts and red onion. Add some red pepper for flavour or cucumber if you like it. Make the dressing very simply with olive oil, lemon juice, a tablespoon of French mustard, salt and pepper. This way it might still feel more like a healthy meal.

So. Now you can eat like Hailey Bieber and it's not even hard.
