”What are we eating today?" It is probably the most asked question in the world. After a hectic day, running from here to there and with an overflowing agenda, you really don't feel like spending hours in the kitchen. We understand that. You want to cook something that isn't too difficult, but is still healthy. Oh yes: and tasty, because no one wants to chew on a dry leaf of lettuce. Do you really not know what to eat tonight? Then we have good news: in the Healthy Recipes of the Week section, we search every Monday for the healthiest and tastiest recipes that you can put on the table in no time. This week: sweet potato mini pizzas.

Yes, you heard it right. We are going to make mini pizzas from sweet potato. Sometimes you just really crave pizza, but that doesn't quite fit into your healthy routine. With all that dough, fat, and oh-so-tasty toppings. Before you know it, you're going over your calorie limit again and lamenting that you're ‘being unhealthy again’. If there's one thing I recognize, it's that. So yes, I got super excited when this pizza copycat appeared on my for-you page. It has melted cheese, tomato sauce, and you can put anything on it that you want – that will really satisfy your craving. And honestly? It's also healthy. The shopping list for 6 mini pizzas

  • +/- 150 grams of sweet potato
  • 1 tablespoon of olive oil
  • 1 egg
  • 162 grams of oat flour
  • Pinch of salt
  • Heinz strained tomatoes as tomato passata (100 percent tomato) or simple tomato puree
  • Grated cheese
  • Other toppings of your choice

The preparation

Step 1: The base of your dough

To make sweet potato dough, they need to be soft first. Place the potatoes with skin (or pre-cut cubes) in a heat-resistant bowl. Heat them in the microwave for seven minutes until they are soft. If necessary, remove the skin and start mashing them with a fork until you have a smooth mash. When you're done, you can preheat the oven to 180 degrees.

Do you make a mess quickly? Then this is the time to grab a larger bowl to mix your dough in. Break an egg and mix it well into your sweet potato puree. Add the oat flour and mix it with a fork or a mixer with dough hooks until you have a sticky dough. Add a pinch of salt and mix it well with your hands until you can form a dough ball. Is it too sticky? Then add some extra flour until you can make a nice ball.

Step 2: from dough to mini pizza

Line your baking sheet with parchment paper. Divide your dough into six parts and roll small balls from it. Yes, you're not crazy: you don't need to roll out this dough. You really don't feel like doing that, do you? It can be that easy. Place another sheet of parchment paper on top and press the balls flat with your hands – or actually with anything you can find. A book? Works well. A pan? That works too. Remove the top paper when they are a few millimeters thin. Spray or sprinkle some olive oil over the pizzas and bake them for 15 to 20 minutes, until they are a bit browner and firmer.

Step 3: toppings, topping and more toppings

Take the sweet potato mini pizzas out of the oven. Oh, an important tip: immediately preheat the oven again to 180 degrees, so that as little temperature as possible is lost while you top the pizzas. First spread the tomato sauce on the pizzas and then top them with everything your heart desires. Melted cheese is a must, but the choice is yours. Play with different vegetables, add some mushrooms or go for jalapeños for some extra spice.

Then put them back in the oven to bake for another 15 minutes or so. And no: you don't have to worry about your pizzas burning. The sweet potato needs to be well baked, otherwise the bottom will become moist and soft.

Step 4: serving

Grab your spatula and scoop the mini pizzas directly from the baking sheet onto your plate. The end result? A healthier pizza with a vegetable base that is really tasty. Do you want to make it a larger meal? Then you can also make one large pizza with the same ingredients. Serve a salad with it and voilà: your pizza craving is satisfied and you haven't strayed from your healthy path. It can't get better than that, right? Exactly.
