What to eat on new year’s eve?

So, after three days of rest it’s time to go crazy again. We’ve just finished criss-crossing the entire country to share Christmas with our loved ones, and now we need to organise our New Year celebration, which sadly cannot be spread over three days with everyone we’d like to see.
Phew, always such a task to decide what to do and to try to get all your favourite people in one space, cause everyone wants something different. Fortunately for me I managed to organise that everyone celebrates that magical midnight moment at mine and then we’re all going our own ways. Boyfriends need to be kissed, dance floors need to be made unsafe or some or other house party is calling.
Fine, everyone is first coming to me to have a bite to eat and to raise a glass. It’s tradition that everyone brings something with them and we all try to keep it fairly simple, and not to over think the healthy aspect. It is 31 December after all and 1 January is a new day. We usually open a What’sApp group to ensure that we don’t end up with three bowls of sausage rolls and everyone has a task.
I’m going to share a few delicious and easy snacks for the evening.
– Mandy, a girlfriend of mine for more than 8 years, often buys a few large Turkish round breads and tears them in pieces. She makes hummus or buys a few tasty dips. Check out the Culy site, they have different types of hummus. Easy and healthy.
– We always have meatballs on the table. My dearest friend Madieke buys Italian spiced mince meat and makes small meatballs from it. A little bit of olive oil in the pan and fry them till they’re brown and crispy. They don’t have to be served warm either. Nice with bread, with a salad or popped in the mouth.
– Another girlfriend Anna, is queen of making melanzane. It’s a type of lasagna, but vegetarian and without pastry. Layer slices of aubergine, mozzarella, parmesan on top of each other and make a quick tomato sauce for in between. Wonderfully delicious and easy to make in large portions. – Then we move on to my bestie Elisabeth who is known for her sausage rolls. Take a large bowl and throw in about a kilo of minced beef, lots of salt and pepper and loads of curry spice. Mix everything with your hands. If you think: too much curry, add twice as much. Yes, seriously, a lot. A Lot. Curry. Take some puff pastry and roll out long sausages from the mince meat, then wrap them in the pastry. Just like a sausage roll should look. Then grate some yummy old cheese over the top and place them in the oven for 30 minutes at 180 degrees. Once they’re done, cut them in smaller pieces. Perfect for an appetiser with a drink or as a late might snack.
– Merel, actually one of the very best cooks among us, is great at making salads. The salad with figs, mozzarella and parma ham is our favourite. Use rucola salad and great some almond shavings over the top, delicious. The dressing is made of lemon, honey and salt and pepper, yum.
We also always have veggies on the table and a few dipping sauces, or we make a fruit salad and place bowls of nuts and olives around. Oh yes, and don’t forget the champagne at 12 o’ clock. The real thing okay? We drink wine before that (nothing special) or Prosecco with berries. Looks fun and cheerful.
