Our health and fitness editor Jet is hibernating for the entire month of November to cook up a storm. Or in her case, a cookbook. And since she doesn’t want us to go off the deep end when it comes to health, she’s found a couple a cool fit girls to guide us through the month. To kick it off, we’ve got Jenny Alvares, a food, travel and sports blogger. She’s going to be introducing us to her healthy and fit lifestyle.
Oh the smell of freshly baked granola bars really gets me excited. Have you ever tried making it on your own? If not, I highly recommend doing it. Your entire house is going to smell like freshly baked granola and it is the perfect meal for breakfast. Oh and it’s easy as pie: all it takes is half an hour of your time.
Ingredients for 1 pot of coconut/cranberry granola?
• 100 grams of oatmeal
• 15 grams of coconut oil
• 60 grams of honey
• 40 grams of nuts (I used: cashews, pecan nuts and almond nuts)
• 25 grams of cranberries
• 20 grams of coconut shreds
• a bit of salt
• one teaspoon of cinnamon
Preheat your oven to 165 degrees. Mix the oatmeal, nuts, cinnamon and salt in a bowl. Heat up the coconut oil and honey in a microwave until it turns into a liquid and add this to your mix. Stir it thoroughly.
Spread the mixture onto a griddle and place it in the oven for 15 minutes. Keep a close eye on it cause they cook fast and you don’t want it to burn. Once you take it out of the oven let it cool off and once it’s cooled down, add the cranberries and coconut shreds. So good and so easy! Enjoy!
