Our health and fitness editor Jet is hibernating for the entire month of November to cook up a storm. Or in her case, a cookbook. And since she doesn’t want us to go off the deep end when it comes to health, she’s found a couple a cool fit girls to guide us through the month. We’ve currently got former Dutch model and actress Ellemieke Vermolen who will be introducing us to her healthy and happy lifestyle.

By schedule is currently extremely packed since my second book ‘Happy’ has just been released. Unfortunately it’s only available in Dutch, but to compensate, I hope you guys will enjoy my posts here on the site. In short, my books cover my personal philosophy about healthy food.

vegetable PASTA with pad thai sauce
By now I’m sure everyone knows it’s not a wise decision to eat excessive amounts of carbs, especially when you’re hoping to lose a few kilos. This is an extremely healthy pasta dish and very easy to make.
What you need for the vegetable pasta
– 4 small zucchini’s
– 4 carrots
– one half of cauliflower
– a handful of unsalted peanuts
– coriander and parsley
– 4 table spoons of sesame seeds
– lime juice
What you need for the pad thai sauce:
– 100 ml tamarind sauce
– 100 ml matelote
– 25 g coconut blossom sugar
– honey or xylitol
– 1 table spoon of chili pepper
– a bit of olive oil
Step one: in order to get strands of spaghetti from your zucchini and carrots, you need a spiralizer. Once step one is complete, it’s time to move on to the pad thai sauce. Mix all the ingredients in a bowl. Place the strands of spaghetti you previously made onto a pasta plate and spread some raw pieces of cauliflower through it and then add the pad thai sauce. To finish it off, sprinkle the chopped up peanuts, coriander, parsley and sesame seeds over it and squeeze a bit of lime sauce on top of it and voilà. There you have it!
