4 X BREAKFAST VEGGIES

Usually the thought alone sounds awful. Spinach for breakfast? No thank you. And eating it pure doesn’t sound to appetizing in the AM either, but believe me: there are a bunch of great breakfast recipes that contain vegetables that won’t overbore (flavor wise) your meal. Because starting off your day with carrots, beets or kale is really good for you. It energizes you, they’re filled with fibers and will keep your blood sugar levels low. This will help you avoid looking around for things to snack on throughout the rest of the day.

Zucchini pancakes

Still might not sound appetizing, but they really are. And don’t be fooled by the zucchini because these pancakes taste like regular pancakes. They’re just a lot healthier. (Here’s a simple recipe.)

Red smoothie

Smoothies don’t always have to be green to be healthy.  A red variety is just as appealing. How about beets? A massive vitamin bomb and a favorite amongst runners because it makes them run faster (more oxygen in the blood). Here’s a recipe for you:

What you need 

1 portion

1 banana

100 gr blue berries (frozen is fine too)

100 gr beets (this is roughly 1 beet)

juice from half a lemon

a shot of coconut milk

How to make it

Put all the ingredients into a blender and let it mix until it becomes one liquid. Do you still think the substance is a bit too thick? Add some more coconut milk or water.

Scrambled eggs and green

When I say smashed avocado you say yes, right? Make some scrambled eggs for yourself, serve it with (smashed) avocado and tomatoes. Zero complaints from you for the rest of the day

Pumpkin porridge

Another meal with a name you have to get used to. This vegetable on it’s own already has a sweet flavor, but cook it and then turn it into a puree. Add some almond milk and a bit of cinnamon, top it off with some granola for that extra bite and feel free to add fruit if you’d like.
