FALAFEL IS THE NEW QUINOA
including a recipe
“Guys, what should I have for dinner tonight?” This is a question that get’s thrown around the office a multitude of times each week and for some reason people always expect me to come up with five or so different meals, preferably with the entire recipe, for them to pick from. I know I focus on a healthy and fit lifestyle, but that doesn’t mean I don’t always stroll around my grocery store knowing what I want to get.
But alright, you want a recipe so I am here to give you one. I like meals that don’t require too much time to make. I’ve got something for you today that includes chickpeas, because they taste great, they’re filling and full of egg whites. We like those, remember? And no, I won’t be giving you the recipe to make hummus. I’m talking about falafel balls. Or a burger, depends on how you kneed it. If you’re making them for your boy, he might raise his eyebrow, so just don’t even mention it. Just give it to him and serve it with a bun. That way it looks like a burger, but little does he know, it’s an extremely healthy one.
Falafel burger
This is what you need
For 2 people
– 400 grams of cooked chickpeas
– 2 table spoons of oatmeal
– a handful of parsley
– a handful of fresh coriander (or chives if you prefer those)
– 1/2 a tea spoon of cinnamon
– 1 small red union
– 1 clove of garlic
– pepper and salt
– some oil to bake in
– hamburger buns incase you want to make a hamburger out of it
– crudités like tomato, cucumbers and some lettuce to stack up your burger
This is how to make it
Purée the chickpeas, union, garlic, fresh herbs, spices and oatmeal in a kitchen blender and then kneed it until it becomes dough-like. If you think it’s a bit too dry, add some water. Then divide it into two and kneed it into two same sized burgers.
Heat up some oil in a pan and bake both sides of the burgers for about 3 minutes.
Serve the burgers on a roasted bun and top it off with your crudités.
