Every monday morning, I make myself a healthy shake. An energizing start of the week is especially welcome after you’ve enjoyed the odd glass of wine during the weekend. Or, in my case, the odd Gin Tonic. It may seem strange to have spinach for breakfast, but this is really a delicious, healthy and sweet morning-treat.

This is what you need and how I make it

  • Half a banana
  • Juice from 2 apples (use a juicer for this). You can also use organic apple juice, for example from Schulp. Available at the health food store.
  • A handful of blueberries
  • A handful of spinach
  • A dash of coconut milk. (Two dashes if you are a coconut fan.)

Put all the ingredients in the blender and mix until smooth. Add a little water if you prefer your smoothie a bit less thick.

  • 2 apples (use a blender to make applejuice, you can also buy readymade organic applejuice)
  • a handful of blueberries
  • a handful of fresh spinach leaves
  • a dash of coconut milk

Use a blender to mix all ingredients until you have a smooth shake. Add a little water if you prefer your smoothie less thick.
