You guys are starting to know that I love healthy eating. Don't get me wrong, I'm also really happy with a glass of wine, a cheese platter, fresh French baguette, or a sticky toffee cake. I do that too, but I compensate it with a healthy day. Yes, really, otherwise I would be a ton heavier. I have to (unfortunately) put in quite a bit of effort. And besides that, my mind energy levels just do really well on such healthy food. It's not boring. Really not.

Just take a look at this healthy dessert. Serve it to your guy without saying that it's totally sugarless and healthy (a lot of men don't want anything to do with that). He'll be sold immediately. And by the way, it's also nice to keep an eye on his six-pack, right?

Raspberry ice cream with basil

What do you need and how do you make it:

  • 1 box of raspberries (frozen, so a night in the freezer)
  • 1 banana (not frozen)
  • A bunch of fresh basil
  • A small splash of water
  • Agave syrup (optional)

Mix all these ingredients together in the blender. If you think the ice cream could be a bit sweeter, add a little agave syrup. Put the mixture in the freezer for about an hour. Before serving, stir everything well again.
Delicious to serve with a dollop of Greek yogurt or crème fraîche.

Coconut ice cream

What do you need and how do you make it:

  • 2 cans of coconut milk (I prefer to buy those at the organic supermarket)
  • 1 vanilla pod
  • 4 tablespoons of raw honey

Pour the coconut milk into a large container and put it in the freezer overnight (the container must fit in there). The next day it will be rock hard, so let the frozen coconut milk rest outside the freezer for a bit. Then scrape everything into a food processor. Add the inside of the vanilla pod (you know, scrape it too) and the raw honey. Blend well together. If all goes well, it should now be a smooth mixture. Pour it back into a container and put it back in the freezer for another hour. After that, you have incredibly delicious ice cream. And healthy too.

Sugar-free almond pear pie

Water ice pops

Here you have so many easy variations of this. Make sure you have ice pop molds at home. You can buy them at Hema or Blokker.

Put some fresh fruit at the bottom of the molds. Strawberries, blueberries, or raspberries for example. Press them down a bit.

Then make lemonade from concentrated juice (you can buy it at the organic store) and pour it into the ice molds. You can also add a sprig of mint.

You can also put watermelon in the blender, along with a piece and a small drop of agave syrup. Pour that mixture back into the ice molds. A night in the freezer and they are ready.

Coconut date balls

What do you need and how do you make it:

  • 200 grams of large soft dates (I usually buy dates at the market, they mostly come in a cardboard box)
  • 150 grams of various raw nuts
  • 1 tablespoon of chia seeds
  • 1 tablespoon of raw cocoa
  • 50 ml of coconut oil
  • Coconut flakes

These balls are deliciously sweet, thanks to the dates. Good sugars!
This recipe is very easy and quick to make. Remove the pits from the dates, then put all the ingredients (except the coconut flakes) in a blender and mix it until smooth. Then roll them into balls (about the size of a marble). Roll them in some coconut flakes that you have sprinkled on a flat plate. This makes them less sticky. You can keep them in the fridge for a few days, but count on them being gone within a day.
