Daan Faber forms, together with Maarten Hoekstra and Igor Sorko, the culinary trio ‘Mister Kitchen’, they come up with recipes, make sausages, distill liqueur, write columns, have many secret plans in the works, and organize the annual food festival De Rollende Keukens. May I please talk endlessly about food with these three men (note, I can do that for hours)? Today I speak with Daan about his week.
I call Daan, he is in Amsterdam while the rest of the city is on vacation. He loves it. He has been abroad a lot lately (just recently in Peru for a coffee project), so it will be a summer in the city. Maybe also because he is getting married in 3 weeks?
Daan, first of all, how was your week?
“Summery. Nice to be in my own city. I had to do a few important things this week. For example, I had fruit photographed and that is really an art, there are only a few people in the Netherlands who can do that well. Ernie Enkelaar for example, he is one of the best. I am working on a secret project that will be launched in the fall. Jam, but with 65% less sugar. A secret superfood has been added, it’s going to be amazing. So soon we will also be on the breakfast aisle in the store. I happened to hear today that we will be in the Jumbo supermarkets, so that’s good news. You can follow everything on the Facebook page. Something else fun this week, I went with my fiancée to two notaries. To sign a prenuptial agreement and we were at the contractor notary to sign for our dream house that we are going to have built.”
How wonderful! You must have celebrated that big time?
“With a white beer at Café Gambrinus in the Pijp.”
Hey, and your wedding? What will it look like?
“For August 23, we have invited 130 people in Raalte. A large tent and a Rolling Kitchen. My fiancée, Maartje, and I are both good at producing, so we did all that ourselves. The dress code is Western Chic.”
How is the weekend being kicked off today?
“I created the WhatsApp group ‘Vongole Friday’ with my two best friends and their wives. I am cooking tonight, they are bringing wine and sweets, and then we are going to get nicely drunk.”
Sounds good! You must have a good hangover tip.
“I bought a sandwich bag with Maca Powder at a market in Peru. I think I will add that to my shake every morning this whole weekend.”
Oh yeah, are you going to drink a lot then? What does your Saturday look like?
“I think I will be on a hetero construction boat for a few hours. It’s the only and most fun festival in Amsterdam, the Gay Pride. It’s so funny how people dress up completely, really a bit of Rio in Amsterdam. And everyone is so happy, I’m really looking forward to it.”
Sunday a rest day?
“Exactly, enjoying really nothing on the agenda. If the weather is nice, maybe a swim in the Amstel. And we are going to the Houthavens where we will start building our dream house in September. It should be finished around this time next year. It will be a five-story canal house by the IJ.”
What kind of music will be played this weekend in Huize Faber?
“My stepsister Katarina is going to sing at our wedding. A new song and I was just listening to it. The song is called Love. Really very beautiful, it will definitely be a tearjerker.”
If practical matters and money didn’t matter, what would your ideal weekend look like?
“Honestly? I think it would be really cool to stay a week in the international space station . Space is the most beautiful thing there is.”
What do you have in your glass with this warm weather?
“Of course rabarcello. And I really love white natural wines that are so delicious they burst out of your glass. And I’m going to open one just before the Vongole goes in the pan.”
