6 rice cake snacks

“So ladies, are you making nice little snacks again?”, we often hear from our left at the lunch table. “Yes indeed, yes”. While we look again how they spread a white bread with peanut butter and Nutella and then sprinkle white XL chocolate sprinkles on top. By the way, we don't say anything about that. Well, making snacks from rice cakes is always a moment of the day that Liesbeth and I really look forward to. Especially when there’s also an egg on the table or when fresh salmon or mackerel has been bought from the fishmonger. The higher the structure, the tastier it is. How we charmingly eat that is a whole different art. May, on the other hand, is much smarter and only builds with sambal on the hummus, cheese, cottage cheese, and peanut butter. I’m a wimp, I find that too spicy. Today I share our favorite snacks (healthy, right, you know me) and suppose you are also incredibly good at making these kinds of treats, email me, because I could sometimes use some new inspiration.

Snack 1

Make some scrambled eggs. Place smoked salmon (preferably from the organic supermarket or fresh from the fishmonger) on the rice cake and put avocado on top of the egg. Add salt and pepper and you have Liesbeth's favorite structure.

Snack 2

Spread a rice cake with a layer of cream cheese (also from EkoPlaza) and a bit of coarse mustard on top. Place a few slices of chicken breast on that. I usually do that a bit like a small pile (yes sorry, it has to look good too) and then as a finishing touch, cut pickles in half. Salt and pepper and bon appétit!

Snack 3

Nut butter (I usually buy nut butter made from hazelnuts or almonds) with slices of apple. Very simple and so delicious. Even more festive with a bit of cinnamon and for the sweet tooth, a drop of honey.

Snack 4

Sheep cheese, oh that is so delicious, especially the softer version. Cut slices of cheese and slices of tomato and avocado. Make a nice little tower out of that and top it off with a sprig of sprouts. Don’t forget the salt and pepper and you can quickly make a second one, just watch.

Snack 5

Spread the rice cake with a (thin!) layer of mayo (I’m a big fan of Hellmann’s mayo) and place mackerel on top. You buy that fresh from the fishmonger, but I also find the canned one from the organic store very tasty. Then add bell pepper: fresh (season a bit with olive oil, salt, and pepper) or grilled (you can also do that yourself or for convenience take it from a glass jar, but that’s not available in every organic supermarket).

Snack 6

Nice for the vegetarians, this one. Mash half an avocado in a bowl together with some salt, pepper, olive oil, and a bit of lemon. Then spread it on a rice cake and place a boiled egg and tomato on top. Done.
