THANK GOD IT’S SATURDAY!

I love the weekend. No rush, no alarm clock, no things to do. Well, almost nothing to do then. I usually exercise on Saturday. That is (sometimes) a must, but that’s the only thing. There’s also always a market in Knokke on Saturday. I usually go very early and get all kinds of delicious fresh things for the weekend. After that, I dive into the gym. In the afternoon, I enjoy making something with the kids in the kitchen. Usually, that’s cupcakes, cookies, or pancakes, and sometimes they help me test dishes, which often leads to chaos in the kitchen.
Sunday is sacred, then we are all together and enjoy an extensive breakfast with the whole family and we regularly go to the beach.
Nice to blow off some steam and search for shells.
Well, and then it’s quickly Monday again, back to the rush and the alarm clock at 7:00 AM.
PANCAKES
My favorite breakfast for a lazy Sunday! These pancakes are also healthy. They are gluten-free and easy to make. My kids love them too.
Ingredients
A handful of walnuts, 100 g oats, 1 teaspoon cream of tartar (baking powder), pinch of sea salt, coconut oil, 1 egg, 200 ml almond milk, 2 teaspoons maple syrup, and coconut oil
For topping: 1 banana, handful of walnuts, maple syrup
Coarsely mix the walnuts in a blender until it has a sandy texture. Do the same with the oats. Put everything in a bowl and add the baking powder, salt, coconut oil, egg, almond milk, and maple syrup. Mix everything and let the batter rest for 30 minutes. Heat a frying pan with 1 teaspoon of coconut oil and add 3 tablespoons of batter. Carefully make a circle with the back of a spoon. Bake them lightly brown on both sides. Add the banana slices, walnuts, and maple syrup on top. You can also sprinkle some raw cacao nibs on top if you like.
