SPINACH SPELT PANCAKE BY ELLEN HOOG

Hey again. Nice to share this recipe with you. One of my favorite dishes from my book ‘In perfect condition’. This spinach spelt pancake with smoked chicken, cherry tomatoes, and Hüttenkäse contains minerals and vitamins that you need as an athlete. It is a perfect dish to have before a workout because of the carbohydrates it contains. Additionally, I often take this pancake with me when I'm on the go for a whole day. Tasty, very nutritious, and convenient.

I always secretly laugh when I think of the moment I unpacked this gem in front of my teammates. The time has passed when we all ate white sandwiches with cheese. But some time ago, it seemed quite ambitious when I brought my homemade granola or healthy pancakes to a tournament or training. ‘No, it's spelt, yes with spinach.’ By now, all my teammates are consciously focused on nutrition and everyone brings their own healthy snacks. So also with this pancake.

Spinach spelt pancake with smoked chicken, cherry tomatoes, and Hüttenkäse

For 1 person

Ingredients:

1 tbsp pine nuts

2 tbsp rapeseed oil

½ small shallot, finely chopped

30 g spinach

25 g whole grain spelt flour

1 egg

60 ml milk

salt and pepper

1 tbsp Hüttenkäse

20 g rucola

35 g smoked chicken breast, sliced

4 sun-dried tomatoes, halved

Ingredients:

1 Heat a frying pan without oil or butter and toast the pine nuts for 3 minutes until golden brown. Stir regularly. Keep a close eye on them; the nuts can change color very quickly.

2 Pour 1 tablespoon of oil into the hot frying pan and sauté the shallot for 1 minute until soft. Add the spinach and let it wilt. Remove the vegetables from the pan and chop the spinach finely with a sharp knife.

3 In a large bowl, whisk the flour, egg, and milk with a pinch of salt and some pepper until smooth batter. Add the spinach mixture and stir well.

4 Heat the remaining oil in the frying pan. Pour the batter into the pan and cook the pancake for 2 minutes. Flip halfway through.

5 Place the pancake on a plate. Spread half of the pancake with the Hüttenkäse and top with arugula, chicken, sun-dried tomatoes, and pine nuts. Fold the other half of the pancake over it and serve immediately.

Culinary tip

This pancake is ideal for on the go. Let the pancake cool down completely before you top it and then wrap it neatly rolled in cling film.
