THE FUNNIEST AND THE EASIEST

GAZPACHOS

Making soup doesn't have to be that difficult at all. Gazpacho especially not. The only thing you need is a good blender blender or immersion blender and fresh products, so no stove, because gazpacho is cold as you probably know. A piece of cake. I give you three simple recipes for gazpacho that taste like you've spent hours in the kitchen. Also handy for when you have a large group of people to feed and you want to serve a (very chic) appetizer. You'll score a lot of points with this.

Tomato Gazpacho

For 4 people

500 grams of peeled canned tomatoes

1 red bell pepper

1 clove of garlic (you can add more if you like)

1 cucumber

A few drops of tabasco

4 tablespoons (good!) olive oil

2 tablespoons of wine vinegar

1 red onion

salt and pepper

optional: half a red chili pepper

Wash (except for the tomatoes of course) and peel everything (yes, also the cucumber) into pieces and put that in a blender. Together with the tomatoes and the vinegar, olive oil, salt, and pepper. Blend away. Then taste to see if it needs a bit more salt or pepper. Or maybe it should be a bit sweeter, then a little sugar is allowed. You can also use a red chili pepper.

Nice to add some cucumber cubes and pieces of toasted bread to the soup when serving.

Cucumber Gazpacho

Okay, here you just need a kettle for the broth.

For 4 people

Peel 2 cucumbers and cut them into cubes

Peel 1 onion and also cut it into cubes (it doesn't matter how big they are, it all goes in the blender anyway)

1 clove of garlic

1 litre of vegetable stock

salt and pepper

Very simple: put everything in the blender and you're done. Let it cool down a bit and serve.

If you like it, you can also serve pieces of smoked salmon in it.

Avocado Gazpacho

For 4 people

2 cucumbers
2 (ripe!) avocados

1 red onion
1 clove of garlic, peeled
2 tablespoons of white wine vinegar
3 tablespoons olive oil

salt and pepper

Optional: a red chili pepper

Optional: coriander to sprinkle on top

The same applies here: wash and peel everything and put it in the blender. Blend well until you have a smooth mass.
