Meet the Dutch Jamie Oliver. I can say that, right? Daan Faber forms, together with Maarten Hoekstra and Igor Sorko, the culinary trio ‘Mister Kitchen’. Not a day goes by that they are not stirring in a pan in their kitchen or brainstorming new recipes. I am a big fan of hun ChiaFruit jam. Then they also organize the food festival every year Rolling Kitchens. Diehard foodies, you could say. So Daan seemed to me a more than clear candidate for Dinner with… Are you reading along?

Where in the world is your favorite restaurant?

‘Jesus.’

Okay, one of your favorite restaurants then.

‘As for the last top experience 2015: L’Arpège Paris, a three-star vegetarian restaurant.

This way the planet can last a little longer; everything is made from vegetables. And in 2016, Mister Kitchen expects a lot from Osteria Francescana by Massimo Bottura. Hopefully, we will eat there in the fall.’

Best restaurant in your city (Amsterdam then)?

‘Rijsel.’

Who would you really like to have dinner with?

‘With Stanley Kubrick in the International Space Station. Floating and philosophizing, that is.’

Where in a restaurant do you prefer to sit?

‘With a view of the kitchen and (after enough wine and courses) next to instead of opposite my Maartje.’

What do you always hope is on a menu?

‘Special, not too tame (natural) wines.’

Do you find your way on the wine list?

‘Sometimes, but someone who can figure out what you like or dares to surprise you is better.’

Starter or dessert?

‘Cheese.’

What fun project are you currently working on?

‘We have just developed a completely new Fresh Asian Take Away for the NS called ENOKI, of which the pilot at Utrecht CS is a great success and the successor of our ChiaFruit will be on the shelf this spring: a healthier and tastier sandwich spread with white beans instead of oil (via our Facebook page you can stay up to date, by the way).
