This is Paloa. She started an Instagram account, just for fun called ‘Cravings in Amsterdam’. There she posted photos of nice hotspots and what she made in her own little kitchen. Not long after: 128K followers later and Leighton Meester who recently became a fan and even likes her photos. Then you can give yourself a pat on the back. Paola cooks super healthy, but also super sweet and she makes the thickest burgers. A combo, so I love that. Every dish is incredibly flavorful photographed so that you immediately get hungry or want to dive into the kitchen yourself. Where in the world is your favorite restaurant?

“I don't have a specific favorite restaurant, but I love Peruvian food. I also miss dishes that I can't make myself here. There's a Ceviche of black mussels that you could really always serve me. No exceptions. In Lima, there's also a small spot next to a market where they sell the best Ceviche. Everything there is just amazing. It's one of my ‘happy places’.”

And who would you really like to have dinner with? It can be anyone.

“My parents. They live in Peru and I don't see them often enough.”

Where do you prefer to sit in a restaurant?

“By a window, so I have good light to take my photos. The camera eats first.”

What do you always hope is on a menu?

“Oysters and a good chocolate cake.”

As a top chef, you must also be disgusted by something? Tell me.

“Haha, I'm really not a top chef. I've just never been a picky eater. Things I didn't like as a child, like beets, I've come to appreciate later. I just experimented with different dishes for my blog and always found a combination that I liked. If I see something new at the market now, I can't wait to try it.”

Do you find your way on the wine list?

“I'm not really a wine drinker, but I really love cocktails.”

Starter or dessert?

“Sharing a starter and then a dessert. When I go out to eat, I love to end the evening with something sweet.”

And, let’s say, you’re cooking for a date for the first time. What’s on the table?

“The first time I cooked for my husband, when we were still dating, I made him lobster and saffron risotto. He once said that eating lobster was really something special for him and I wanted to impress him. I think it worked, we've been married for six years now.”
