This is the latest food trend in New York

Just when we all got used to the açai bowl (if you still don't know how to pronounce this perfectly, read this this for a moment), it is already being dethroned. There is a new breakfast that is going to conquer the world. It is the Brazilian tapioca crêpe that many New Yorkers have already had to queue for.
And I totally understand why. You can customize it yourself. And that is the most fun part. Fill them for breakfast with fresh fruit, maple syrup, and a dollop of coconut yogurt. And for the real die-hards (for example, with a hangover) with scrambled eggs, bacon, hummus, or avocado. The pancakes are made from tapioca flour. Tapioca is a starch derived from the cassava root. The flour is gluten-free and has a moisturizing effect on the skin. Eating pancakes for the perfect glow, it could be worse, right?

Unfortunately, we haven't spotted the new trend anywhere on the menu in the Netherlands yet. I understand that you won't be taking a flight to NYC in the short term. That's why I'm diving into the kitchen today for you to create the perfect recipe. So you can surprise your loved one with a crêpe in bed next week. That's just me.
