FORGOTTEN VEGETABLES that WE MUST NOT FORGET

They didn't get this name for nothing and that's actually a shame, because they are so delicious. And at some point, you also get a bit tired of having zucchini, bell pepper, and avocado in your shopping basket every day, right? On a slightly more special day, pak choi or sweet potato might be thrown in, but those are exceptions. People, don't forget the forgotten vegetables, because they are incredibly healthy, tasty, and look cheerful on the table. Just read carefully:

Horseradish

I use horseradish very often. You can buy horseradish fresh and grate it or take it out of a jar (that's fine too). Delicious in meatballs or a bit on smoked salmon. Horseradish is very sharp, so be careful with large amounts.

Palm cabbage

Palm cabbage, also known as cavolo nero, resembles kale and tastes a bit like it too. This is an incredibly forgotten vegetable. This vegetable is mainly eaten in Italy, for example with linguine and Parmesan cheese.

Swede

Or may turnip or rutabaga. Especially a lot to taste in organic restaurants that also have their own vegetable garden. Swede contains a lot of vitamin C and calcium. The taste is sharp and quite spicy. Delicious roasted from the oven with a piece of meat or fish.

Jerusalem artichoke

Also known as topinambour. Jerusalem artichoke tubers are nutritious and easily digestible. The Jerusalem artichoke can be eaten raw, for example as a salad. The taste of the tuber is a bit sweet, nutty, and has something of artichoke.

Rapeseed leaves

My mother often makes a mash with these. Rapeseed leaves are delicious combined with sweet potato. They resemble arugula a bit. Rapeseed leaves are not only very tasty but also particularly healthy. They contain hardly any calories (only 17 kilocalories per 100 grams raw), but contain decent amounts of beta-carotene, folic acid, and some other antioxidants.
