5 desserts without guilt
Whether I am served a plate of dry rice with broccoli or a three-course dinner with all the trimmings, there is always room for a dessert. The difference lies only in what kind of dessert. A classic Dame Blanche does not please me, and a bowl of perfectly creamy, amaretto-soaked tiramisu is not for me either. My desserts are tasty, absolutely, but also responsible. Okay, apart from that chocolate mousse and the best warm apple pie in Amsterdam… Are you like me a huge sweet tooth and can't live without dessert? Then I have five healthy recipes for you. And you don't have to run an extra lap around the park for it.
1.Ice cream with hidden vegetables
- 1 nectarine
- half a frozen banana
- a handful of frozen cauliflower florets
- 1 tbsp almond paste
- splash of plant-based milk
- Put all the ingredients in the blender and mix until you get a creamy mass.
- Don't mix too long, your ice cream melts quickly.
2. Low-fat quark with fried banana
- 150 grams of low-fat quark or yogurt of your choice
- 1 banana
- 1 tbsp grated coconut
- splash of maple syrup
- Heat a small pan over medium heat and add a tsp of coconut oil.
- Cut your banana into pieces and fry until golden brown in a few minutes.
- Add the coconut flakes and maple syrup.
- Put the yogurt in a bowl and serve with the warm banana.
- Garnish with some extra coconut flakes.
3. Warm fruit with cashew cream
- – 50 grams of raw cashews
- – vanilla extract
- – splash of maple syrup
- – a few drops of lemon juice
- – splash of plant-based milk
- fruit of your choice (I use an apple, pear, or ripe peach/nectarine)
- Soak the cashews in water for at least three hours.
- Then put them together with the other ingredients in the blender and mix until you get a creamy mass.
- Cut your fruit into pieces and then fry it in a little coconut oil over medium heat.
- Serve your fruit warm with a spoonful of cashew cream.
4. Chocolate truffles
- 100 gr almonds
- 200 gr pitted medjool dates
- 50 gr raw cocoa powder
- 1 tsp vanilla extract or vanilla powder
- Pinch of sea salt
- Pinch of cinnamon
- grated coconut
- Grind the nuts in the blender to a fine powder. Add the dates and mix until it becomes a crumbly mixture.
- Add the cocoa, vanilla, and sea salt and mix this in.
- Knead the dough into a whole and roll small balls from it.
- Roll the balls in the coconut and store them in the refrigerator.
5. Mango sorbet
- 1 mango or fruit of your choice
- splash of plant-based milk
- Cut your mango (or other fruit) into pieces and remove the pit.
- Place your (ripe) piece of fruit in the freezer for at least three hours.
- Put the mango together with a splash of plant-based milk in the blender and mix until you get a smooth mixture.
- Serve your sorbet immediately.
