Easy Thursday with Jamie and Simoon
You come home after a long day at work and then you have to do the grocery shopping and cook. The couch is winking, your partner is hungry and you don't feel like it. Then you can do two things: order takeout or throw a toast in the pan. Neither is really the healthiest option. Luckily, our cooking hero Jamie shows with his new book ‘5 Ingredients’ that you can quickly and easily prepare a delicious meal with just five ingredients. One of my favorite recipes from the book is already the linguine with zucchini and lemon. Healthy, quick to prepare, and vegetarian. If you leave out the parmesan, I can also make the vegans among us happy with this pasta. Believe me, no delivery meal can compete with this and it's also more pleasant for your bank account.
LINGUINE WITH ZUCCHINI AND LEMON
For 2 people – ready in just 15 minutes
- 150 g linguine
- 2 differently colored zucchinis
- ½ bunch of fresh mint (15 g)
- 30 g fresh parmesan
- 1 lemon
1. Cook the pasta according to the instructions on the package in salted boiling water, drain and reserve a cup of the cooking water.
2. Cut the zucchinis lengthwise into slices and then with a sharp knife or a julienne knife on a mandoline (with a protective cap!) into long strips. If you have a spiralizer in your kitchen drawer, you'll be done even faster.
3. Place a large non-stick frying pan over medium-high heat with 1 tablespoon of olive oil and add the zucchini pasta. Stir well and let it cook for 4 minutes over medium heat. Meanwhile, finely chop the mint and add that to the zucchini as well.
4. Toss the pasta with a splash of the cooking water through the zucchini.
5. Grate most of the parmesan and a little lemon zest over it, squeeze in all the lemon juice and mix everything well.
6. Season the pasta with sea salt and black pepper.
7. Serve the plates, grate the rest of the parmesan over it and drizzle with some extra virgin olive oil.
