Luxury scones
A Sunday with scones is like a Sunday should be. When I lived in London London, I had my regular spot where I would plop down on weekends. The scones were still warm with a huge dollop of clotted cream and a smear of jam on top. A good cup of coffee alongside and you don't know what you're experiencing. These luxury scones are so intensely delicious that you can skip the clotted cream and jam. Believe me: they will change your life forever.
Sunday scones
- 400 grams of spelt flour
- 2 tsp baking powder
- 1/4 tsp salt
- Pulp of 1 vanilla pod
- 80 grams of coconut blossom sugar
- 100 grams of raisins
- 150 grams of cold butter in pieces
- 125 ml buttermilk
- 125 ml crème fraîche
- 1 egg
- 1 egg yolk + a pastry brush
- Preheat the oven to 180 degrees.
- Sift all the dry ingredients, except for the vanilla and the raisins, into a large mixing bowl.
- Add the cold butter and knead with your hands until the ingredients are combined.
- In another bowl, mix the crème fraîche, buttermilk, egg, vanilla, and raisins together.
- Add that to the butter mixture.
- Roll out the dough into a large slab about 2 centimeters high and divide it with a knife into 10 equal parts, without touching the bottom.
- Brush the dough with a beaten egg yolk and sprinkle with some extra coconut blossom sugar.
- Bake the scones for 45 minutes until done.
