Popcorn granola bars
Okay Elkie, this one is for you. For those who didn't know; Elke and I are a huge popcorn team. Do you think you can sit in a cinema as a person with misophonia without a bowl on your lap? Well then, that's where my addiction started. From that moment on, there's always a bag in my cupboard. Yesterday I found a leftover that was just not enough to plop down on the couch with (seeing the bottom when opening a bag leads to disappointments), and so I decided to turn on the oven and come up with something new for you. From now on, your life is complete. These popcorn granola bars are your perfect afternoon snack, after dinner treat, or the reason why you sneak into the kitchen at night... No thanks needed, girlfriend.
Ingredients:
- 50 grams of popcorn of your choice (I use Propercorn Lightly Sea Salted)
- 250 grams of nut butter
- 100 grams of maple syrup or date syrup
- 1 tsp cinnamon
- 50 grams of pumpkin seeds
- 50 grams of sunflower seeds
- 50 grams of millet
- 50 grams of chia seeds
- 50 grams of shredded coconut
Here's how to make it:
1. Melt the nut butter together with the maple syrup over low heat.
2. Stir in the seeds, coconut, raw millet, and popcorn.
3. Line a shallow baking dish with baking paper.
4. Spread the mixture over the baking dish and ensure that the bar is evenly thick everywhere.
5. Place the baking dish in the freezer for at least an hour.
6. Cut the bars into equal pieces and store them in the refrigerator.
