Healthy Oreos

The Oreo. I'm sorry, friend, but I've never understood the black rascals filled with white frosting. And that makes me the odd one out in the editorial team. One dips it in the thick white foam of her cappuccino and the other breaks the cookie open to lick the white glaze out. Since there has been mass complaining in our office about jiggly thighs and love handles, I thought it was time for a healthy version of the famous cookie. I'm curious how long it will take before I get the question of when ‘I can bake a batch...

For the cookie: 

50 grams of oats

180 grams of almonds

100 grams of pitted dates

100 grams of raw cacao

1 tsp vanilla extract

3 tbsp coconut oil
For the filling:

2 tbsp maple syrup

3 tbsp coconut oil

2 tbsp plant-based cream
1. Blend all the ingredients for the cookies in a mixer.

2. Form a ball and roll it out until you get a thick slab and place it in the freezer for at least ten minutes.

3. Meanwhile, mix all the ingredients in a bowl until you get a smooth mass and also place the filling in the freezer for ten minutes.

4. Take the dough out of the fridge and cut out cookies using an espresso cup or glass.

5. Spread the frosting over the cookies and place the other cookie on top of the frosting.

6. Store the cookies in the fridge.
