Baking failure:

Banana bread granola

*Knock on my front door* Oops, the music is too loud again, it immediately shot through my mind. There are actually two things I tend to do on Sunday mornings. That is 1. Letting David Gray scream a bit too loudly through the speakers and 2. Letting the blender run a bit too long (read: noise). Both not very nice for my downstairs and upstairs neighbors. Cautiously, I peeked out the door with my still somewhat sleepy head. It was indeed my upstairs neighbor; not to complain, but with an empty plate in his hand. Whether he could also have a piece of cake.

Good morning dear friends, it’s Sunday again and therefore time for a recipe. And today I would like to gift you one of my favorite recipes. I sometimes make it just for the lovely smell in the house (which my upstairs neighbor came for this morning). Not cake, but something that tastes like cake. This banana bread granola is currently my absolute favorite. The best part is it in combination with a bowl of coconut yogurt. And then put a lot of granola in it. Because believe me; once you’ve tasted a handful, that jar will be empty in no time.

For one jar of granola:

200 grams of oat flakes

50 grams chopped walnuts

50 grams chopped pecans

5 tbsp maple syrup

1 tsp sea salt

1/2 tsp cinnamon

1 tbsp flaxseed

3 tbsp coconut oil

1 tsp vanilla extract

1 overripe banana

  1. Preheat the oven to 180 degrees.
  2. Mix the oats, cinnamon, maple syrup, salt, flaxseed, and chopped nuts in a large bowl.
  3. Put the coconut oil, maple syrup, and vanilla extract in a saucepan and warm it over low heat.
  4. Pour the oil mixture over the dry ingredients and mix it well.
  5. Put the banana in the blender and blend until you get a liquid mass. Then add it to the oat mixture.
  6. Line two trays with baking paper and distribute the granola mixture over the trays.
  7. Bake the granola for 20 to 25 minutes until golden brown.
  8. Stir the granola after 15 minutes so that everything becomes evenly brown.
  9. Remove the granola from the oven, let it cool, and put the granola in an airtight jar.
