Breakfast waffles

Sunday morning. Time for freshly baked warm waffles in bed with blueberries and a drizzle of maple syrup. Prefer a savory variant? Skip the blueberries, throw some bacon slices in the pan, and slice half an avocado to go with it. Add a poached egg and you have an Instagrammable plate in no time. But some warm apple slices with cinnamon and honey also work well. What are you waiting for? Sprint into that kitchen, the sooner you can get back to bed. For 8 breakfast waffles

  • 150 grams spelt flour
  • 2 tsp baking powder
  • 1 egg
  • 200 ml buttermilk
  • 100 grams blueberries
  • maple syrup
  • pinch of salt

Put the flour with the baking powder and salt in a bowl. Add the egg and slowly stir in the buttermilk. Fold three-quarters of the blueberries into the batter. Grease the waffle iron with butter or olive oil. Divide a generous spoonful into the waffle iron and bake the waffles until golden brown in three minutes. Serve the waffles warm with the blueberries and the maple syrup.
