The easiest apple pie ever

If you didn't already know that we at the editorial office are quite addicted to apple pie, then you have probably been living under a rock. Preferably warm and from our friends at the Taartenkamer. Thick crust, fresh sweet apple, and covered in a hefty amount of cinnamon. Heaven on earth. But that classic apple pie can be made in a million ways. Today, I’m sharing one of the simplest variations with you: the French one. A thin crispy base with a thin layer of apple and a sweet topping. Officially, you serve this treat with a spoonful of crème fraîche or custard. But if you're just as much on your way to that bikini body, go for a spoonful of Greek yogurt. Actually, this pie doesn't need all those frills. What are you waiting for? Let's bake.

Quarter past six. With a sigh, I turn off my alarm clock. Why am I doing this again? And how can half an hour in the morning make such a difference?

Ingredients

For the crust:

3 tbsp coconut flour

175 grams almond flour

pinch of salt

55 grams butter at room temperature

3 tbsp maple syrup

2 whipped egg whites

5 apples sliced thinly

1.5 tbsp melted butter

2 tbsp maple syrup

1/2 tbsp cinnamon
1. Sift the coconut flour into a large bowl and add the almond flour and salt.

2. Cut the butter into cubes and add it to the dry ingredients.

3. Using a knife, cut the butter into the flour.

4. Finally, knead the dough with your fingers.

5. In another bowl, mix the egg whites with the maple syrup.

6. Add the egg mixture to the dough and knead until all ingredients are combined.

7. Let the dough rest in the fridge for half an hour and in the meantime, preheat the oven to 180 degrees.

8. Line a cake tin with parchment paper and then lay the dough over the tin.

9. Make sure the base is evenly thick everywhere and that the edges are also covered with the dough.

10. Arrange the apple slices in a circle on the dough until the entire pie is covered with apple slices.

11. Mix the melted butter with the maple syrup and cinnamon and drizzle it over the apples.

12. Bake the pie until done for about 35 minutes.

13. Serve with a spoonful of Greek yogurt or a spoonful of crème fraîche.
