Vegan meatloaf from the Airfryer
As a child, my mother knew exactly what made me happy at the table: homemade meatloaf. In the evening with a fresh tomato salad or just as leftovers for lunch on a crispy fresh roll. Nowadays, I eat less and less meat, yet I sometimes miss that old-fashioned meatloaf. It’s not necessary at all, because did you know that you can make such a roll very tasty without a crumb of minced meat? This ’meatloaf‘ is made from lentils and vegetables and is also completely vegan. Delicious in the evening with some grilled vegetables or a fresh salad, but also great to take to the office. A dab of mustard or a slice of avocado and you have a delicious lunch. Easy to make, just in your Philips Airfryer XXL. Vegan meatloaf
- can of green lentils, uncooked
- A handful of walnuts
- 3 tbsp ground flaxseed and half a cup of water, mixed and set aside until it becomes a ‘gel’
- 3 cloves of garlic
- 3 small onions
- 3 stalks of celery
- 3 large carrots, peeled
- 1/2 cup oat flour
- 1 cup breadcrumbs
- 2 tbsp fresh thyme
- 1 tbsp rosemary
- 1 tsp smoked paprika
- salt and pepper
- chili flakes
- 2 tbsp tomato ketchup
- splash of maple syrup
- Preheat the Airfryer to 180 degrees.
- Drain the lentils and rinse them with water.
- Heat a frying pan and lightly toast the walnuts.
- Mash the lentils with a masher or an immersion blender. Not too long, the mixture should still have some bite.
- Put the celery, onion, garlic, and carrots in a food processor until you get a coarse mixture.
- Place a large pot on the heat, add some olive oil, and sauté the vegetables for 5 minutes.
- Add the herbs to the vegetables and season with salt and pepper.
- Mix the ketchup, maple syrup, balsamic vinegar, and chili flakes in a bowl.
- Chop the walnuts coarsely.
- Combine the lentils with the flaxseed mixture, walnuts, oat flour, breadcrumbs, and vegetables in a large bowl and mix well.
- Line a loaf pan with parchment paper and add the batter.
- Spread with the ketchup mixture.
- Bake for about 25 minutes in your Airfryer.
